Look for an Atari Jr with an a/v mod too. I think the Jr's have the easiest mod, so they are not hard to find if you do not want to mod a system you already have. Also, those Video Pinball Units are not expensive, so if the resistor surgery doesn't pan out, maybe you can snag the woodgrain model.

As far as I know, the answer is still no for retro light gun games. The old light gun games depended on the rate the analog signal was painted on the phosphor screen by the electron gun.
