I actually prefer the Game Boy Battletoads to the NES version because it's the only Battletoads game I can beat legitimately. Arctic Cavern in Battletoads.

The snow stage in Strider (arcade/Sega Genesis) has gorgeous scenery. I remember being blown away when I played the Genesis port when it came out.
