I love steak.

The other night I got soused with my neighbor. He likes to go to the Horseshoe Casino quite a bit, and this results in him getting coupons in the mail for their buffet and steakhouse. And they had this picture of a steak fit for a king. I mean, this thing looked so delicious. I drunk-texted my wife to have her drive me to the store so I could get my steak fix that night. Unfortunately she wouldn't, and I had had WAY too much to drink to even consider driving myself. Fortunately we had some Planters peanuts in the back of the cupboard. Yum.

This afternoon, I made an absolutely EPIC New York Strip steak. I tried making one yesterday too, but I messed it up. I overcompensated for the cold, and let my grill get too hot. Got up to around 500º, which isn't good. The steak got too seared and got cooked too fast. As a result, I was eating a tough, well-done, and dry steak. Not to mention that it was a bit under-seasoned. Hey, it's been awhile since I've made steak.

So I tried again this afternoon. Grabbed some McCormick's Montreal Steak seasoning, and once again had a New York Strip. I think the quality of meat was a little better, but I also did a much better job cooking it as well. This time I didn't let the temperature get above 400º, and was very precise on the time I let it sear (Three and a half minutes). And I made sure that I checked it after five minutes of cooking on the top rack after I had it seared. Again, not letting the temperature climb above 400º. It can be hard to tell if it's done or not, but it seemed like it was. So I took it off and let it sit for a couple minutes. Then I took a bite.

Holy cow. This was probably the most tender steak I have ever had. Medium-rare, seared perfectly, and super-tasty. For awhile I was making the perfect steak each time, but recently I had lost my touch. Well, I think it is safe to say that I have it back:Image By the way, that's not white powdery stuff, that's a camera flash reflection off of the steak juices. It was so tender that even the camera was impressed!

Sometimes I'm in the mood for different cooking methods. I also love a good pan-seared steak. I even bought a flat surface for my grill because if you cook it inside, it stinks up the whole place. But I have a much tougher time with that it seems: Image Usually I don't get it as tender doing this. But it still tastes pretty good.

Tomorrow I want to use this A1 New York Steakhouse marinade that's been getting harder and harder to find in the stores. Oh, and another tip, whether it's marinade or seasoning, stay away from anything Chicago when it comes to steak.

I can definitely get into this subject.

Nice job on that steak of yours. To me the New York Strip is my favorite cut. It's so easy to grill and get right. I really like mine rare to medium-rare.

I signed up for Blue Apron a few weeks ago. It's a subscription service where they send you ingredients and recipes with detailed instructions. One of their recent recipes was a Ribeye with a potato hash. The comments section on tips suggested using Alton Brown's approach.

Essentially, you take a cast iron skillet, bring it up to 500 degrees in an oven for 5 minutes. Then place it on the stove and heat that on high for 5 minutes. Flip the steak on for 30 seconds each side then transfer to the oven for 2 minutes. Flip, and let cook for another 2 minutes and you're done. Transfer to a plate and tent with foil. Super easy and very tasty.

The downside was it generated a ton of smoke indoors. But the cook itself was tasty as heck. I will say the actual cut of meat from Blue Apron wasn't the best but it's been awesome learning to actually cook a ton of different things.

The only major downside to Blue Apron so far for me is I'm slow. The recipes say they'll take 30-45 minutes. I need to double that as I'm slow chopping stuff. But it's been awesome to actually learn how to do something other than use my grill or smoker. Hmm, smoker...new topic? :)

Nice topic!

I have a friend that is a steak fanatic. Whenever we hang out at his house I know we're gonna be having some nice rib-eyes, porterhouses, or NY strips.

Last year he upped his steak game and got a sous-vide machine. With this crazy contraption he puts the steaks in some plastic bags or maybe he vacuum seals them...not sure. Then he plops them into boiling water inside of the sous-vide machine. This allows him to cook the steak to a perfect rare / medium rare that we both crave. Afterwords on either a super hot grill or cast iron skillet he seasons the steak and just sears the outside for a minute on each side. As it rests he puts some butter on the steaks.

Sweet, dear Lord...oh my! These things come out so GOOD. Ever since he got that sous-vide machine they come out perfect every time. I've looked them up and they're a tad expensive, but it's hard to argue with the results.

I luv steak too! Just had a ribeye yesterday that was unbelievable. I'm talking eyes rolling to the back of my head it was so good!

I had the best steak of my life the other night. Too bad I didn't make it. You see, it's restaurant week, at least around Chicago. And many restaurants have deals going on. This included Ruth's Chris Steakhouse. For forty bucks, you got your choice of entrees with a side, appetizer, and dessert. I decided to go with shrimp gumbo, a Coke, and mashed potatoes. But none of you care about that, you probably want to hear about the twelve-ounce New York strip steak I had.

Well, this thing was out of this world. I ordered it medium-rare. They did this thing with butter and the plate was sizzling hot. I was in heaven with each and every bite. Didn't even need steak sauce as I normally do.

I have never had anything like this in my entire life. I really must figure out a way to make some money so that I can eat like this every day.

I've been on this weight-loss diet (I'm not that bad, but could stand to lose a few pounds), and I was delighted when I could have steak. So I grabbed four of them today and threw them on the grill so that I could have them over the weekend. I seared them one one side and flipped them over. Then I went to prepare the vegetables.

As I put them in the microwave, I looked back at the grill and noticed that it was smoking quite a bit, which was unusual since the grill temperature wasn't very high and the steaks weren't on for very long. As I went onto the balcony, it smelled like a bonfire, which isn't how a steak is supposed to smell. I lifted up the top and the steaks were fine. As I looked down by the gas control panel, I noticed the smoke was coming from it. Turns out a bird had built a nest there and the heat caused it to catch fire. So I ran to the hallway, grabbed the fire extinguisher, and put it out.

Good thing I had looked back. It's why you never leave a grill unattended. The fire never had a chance to get that big, but it was right next to the propane tank. As I'm typing this, I could only imagine what would have happened had the fire eaten through the propane hose which was about six inches away.

Maybe I'll stick to pan-searing from now on. Oh, and the steaks came out fine, although I had to microwave them to finish cooking. They weren't bad.

I work at a yacht club, and the steak there is amazing. A1 just makes it golden.

So yeah, steak is fantastic, though tilapia cannot be beat in my opinion.
