My friend Eric was over the other day and we pulled this one off the shelf. It's been so long I had forgotten what it was like!
You can choose from one of five X-Men, each with their own ability and unique stages. The graphics are great - positively arcade-like. Normally I would re-review a game I haven't played in so long, but in fact my current review (dated July 2000) pretty much hits the nail on the head. Could probably use a little more detail however.

The game is lacking a two-player mode, and a scoring system. Otherwise pretty awesome.

Re: X-Men: Mutant Apocalypse (SNES)
Ah yes, this great superhero game. Wolverine, Psylocke, Cyclops, Beast, and Gambit. Shame SNES owners could never get a port of the awesome arcade game, but this was the next best thing. I managed to beat Magneto with Wolverine, something he couldn't do in any other medium.
