I'm not a huge fan of wrestling, but I've been rewatching some past Wrestlemania matches from the 80's and early 90's and here are my favorites:
Junkyard Dog vs Greg Valentine (I) - unlikely start with the underrated JYD coming out on top.
Ricky Steamboat vs Hercules Hernandez (II) -Ricky Steamboat showing off his preliminary best against a brute who tries a crossbody, but eats some knees, and then Ricky gives his own crossbody finish, also with his signature chops, and armdrags!
Hulk Hogan vs King Kong Bundy (II) - as if the celebrity officials weren't cool enough (Referee Robert Conrad, Timekepper Ricky Schroder, and Announcer Tommy Lasorda), the match is more about Hogan trying to outwit and outmaneuver the human condominium, despite taped ribs.
Ricky Steamboat vs Randy Savage (III) - the ironically best match in the card, beating out Hogan vs Andre, a technical masterpiece even today!
Hulk Hogan vs Ultimate Warrior (VI) - face vs face, the ultimate showdown, despite their limitations, they bring out the best!
Randy Savage vs Ultimate Warriors (VII) Warrior's best match, and with Savage at opposite side, Warrior unleashed his full potential.

WM ladder matches usually deliver, but TLC 2 at WM17 and the original Money In The Bank at WM21 were probably the best.
Speaking of 21, I love Angle vs. Michaels.
And of course, Bret vs. Austin at 13, and the Taker/Michaels duology.
And I personally love the OG Taker vs. Kane match at 14.
I gotta say, this year's Mania was incredible! My favorite moment overall was probably Damian Priest cashing in his MITB briefcase on Drew.
My all time favorite Mania will always be 21 though. Such a great show that was very important for the future of WWE!

I'm not as familiar with the later Wrestlemanias since I lost a lot of my interest in WWE in the early 00's after WCW was sold to WWE. I really like Bret Hart vs Owen Hart from WM10, Savage vs Steamboat from WM3, Warrior vs Hogan from WM6 (nostalgia because that's when I got into wrestling), Warrior vs Savage from WM7 and Rock vs Austin from WM17.

Just watched Wrestlemania X and I have some favorites from this one!
Bret Hart vs Owen Hart - Brother vs Brother in the ultimate showdown with a touch of irony!
Ladder match: Shawn Michaels vs Razor Ramon - speaking of irony this was the better match than the main event! Two big names at the time giving it their all and holding nothing back, using the ladder in all sorts of means, hitting hard and lots of unpredictability!

I definitely agree with TLC II from WM17 being amazing (probably my favorite WWE match from what I've watched so far), as well as Bret/Austin at WM13, and Undertaker's matches from WM25-28 or so all being incredible, with his WM25 match in particular probably being the greatest match in company history.
As for some matches that I don't think have been mentioned yet, Jericho/Michaels and especially the main event of WM19 (even with the botched shooting star press, it's still my favorite match on the card), and the main events of WM17, WM20, WM24 and WM12. There's also the awesome match between Mick Foley and Edge at WM22 which is also definitely a personal favorite of mine. The WM23 MITB ladder match I think is pretty underrated, with it being just about right under Bret/Owen from WM10 as one of the absolute best opening matches in Wrestlemania history in my opinion. The triangle ladder match from WM16 is yet another one I love. Lastly, I love Gunther vs. Drew McIntyre vs. Sheamus at WM39.
To shake things up a bit, I'll list some of my least favorite Wrestlemania matches:
* Undertaker's matches at WMs 9, 13 and 15 (I haven't seen his WM11 match yet)
* Roddy Piper vs Mr. T at WM2
* Jerry Lawler vs. Michael Cole at WM27
* Divas Battle Royal at WM25
* Big Show vs Akebono at WM21
I suppose I'll end with listing some matches that aren't super amazing but I still think are worth a watch:
* Chicago Street Fight at WM13 (a nice cool-down from Bret/Austin IMO)
* Vince McMahon's matches at WMs 17, 19 and 22
* Gimmick Battle Royal at WM17
* Evolution vs The Rock 'n Sock Connection at WM20
* Undertaker vs. Triple H at WM17
NOTE: I definitely haven't watched a significant majority of recent Wrestlemanias or Wrestlemanias as a whole, and I don't care as much for the earlier ones either, so keep that in mind.

I agree with Hulk Hogan vs. Ultimate Warrior
It was easily the most anticipated match of all time and it lived up to its billing. I was very upset that Ultimate Warrior won though. The whole story behind it was that they were a tag team for a very brief time, and had a falling out. Them as a tag team was freaking incredible.

Bret Hart vs. Steve Austin at WM13 might be my favorite match ever. The thought of Bret Hart going heel (at least in the USA) was mind-blowing. Plus, it was the feud that launched Austin into the stratosphere, not to mention WWF/E's comeback in the war with WCW.
