The why:
It makes working on the computer much easier. For instance, a word processor can be on one screen, your email or web browser on another (which is quite useful when you are using the web for research).
But the main reason is because it is far easier to run music creation software (SONAR, Cubase, Pro Tools etc.) on a two monitor setup, since such software tend to produce a TON of windows. I compose music for computer games, which is my "hoping to someday overtake my day job but I'm still very happy to get to do it at all" thing (www.robhowardmusicproduction.com).
The how:
You can do it two different ways. The easiest is to buy a graphics card that has two outputs (which is what I did). The other is to have two graphics cards. I think there might be some cards that let you use a sort of "splitter" cable also, but I'm not sure about that.
Finally...........
It's totally awesome, in a nerd like way, to have the two screens. (-:
