[SPOILER DON'T READ IF YOU DIDN'T SEE THE MOVIE]IIRC, there were three of them left, and they revealed their cards real slow. The first guy had a decent hand, then the bad guy turned his over and he had a really great hand, then Bond turned his over and *gasp* an unbelieveably incredible hand.
I'd have found it better if one guy had went in on pocket queens because he was the blind ad was almost broke, while Bond could have taken a guy who had two aces and two kings by having 3 twos or something. It was basically like a disney movie. Also, it annoyed me that they had one of the characters explain the game to another so that people unfamiliar with poker would understand. Hey, here's an idea, don't spend an hour on a poker game if you think the people watching won't understand it. I don't quite get football, but when I go to a football movie 'm always pretty clear on who's winning from the reactions of the characters. If Bond's friends look happy, I think the audience will get the point that he had a good hand. That and the pile of chips are probably enough explanation unless you really drag the game out, which they did.
