1. Bionic Commando. With the same storyline as the Western NES version: neo-fascists in the future are trying to revive Hitler. Rather than festooning the game with swastikas and hit you over the head with the fact that you're fighting fascists, they should keep the subtleties of the NES game, and only let you know that "Master D" is Hitler at the very end.
Of course, the nunchuk will be used for the grip line and aiming. It could be an FPS or third person shooter, if it's done well.
2. Strider. It could be a remake in the mold of the Xbox Ninja Gaiden. Of course the Wii remote will be used for swinging the plasma sword. I really didn't care for the NES version or Strider 2, so maybe it could be a remake of the very first one... I'd especially like it if they left in the part where the Politburo "collectively" turns into a hammer-and-sickle wielding centipede!
I'd like to see the same storyline as the original too.. with the Gorbachev-like Soviet premier cursing your exploits at every turn.

(Of course, The Red Star seems to be heavily influenced by Strider... maybe that will satiate me if they never come out with a Strider remake)
