God of War 2; no contest (Guitar Hero 2 for 360 is also quite good, but it's based on a game from last year).

Early picks for Game of the Year 2007
However, as you said in the OP, there is going to be a mammoth amount of "GOTY" candidates (assuming stuff gets released on time).
Strangely enough, though, I can tell you up front that Nintendo will get screwed. If they release Mario Galaxy, Metroid Prime III, Smash Bros. Brawl, and Phantom Hourglass (not too mention the already released Super Paper Mario, a dark horse candidate) in the same year, they'll basically cancel each other out.
Not too mention that the gaming media seems to give Nintendo a hard time when it comes to these sorts of accolades. IGN really infuriated me with their flippant attitudes towards both Twilight Princess and Wii Sports last year. The magazines, such as EGM, seem skewed towards games that are "adult" (and what I really mean is lots of guns and violence).
So with that said, I will predict that no Nintendo made game will get a game of the year from EGM, Game Informer, or IGN.com. It'll be a square off between Halo III, Mass Effect, and perhaps a few "critical darlings" that nobody played (but the editorial board thought was good).
In that sense, there is a Wii title that has a shot. Suda 51's No More Hero's is supposed to come out this year, and could really turn some heads. While I can't say I care for the premise, I can't help but be fascinated by this emerging artist. Sort of like Tarantino: Don't really care for what he does, yet I recognize the originality.
Anyway, long story longer, my pick for game of the year will be:
Halo 3. The biggest American made game series will sweep the awards. Almost out of respect, though I fully expect Bungie to knock this one out of the park.
Runners Up:
Mass Effect, No More Hero's, Super Mario Galaxy, God of War II.
I think 2007 is going to go down as another banner year for great video gaming, however.

Likely will be Taito Legends 2, Brothers in Arms, Project Gotham Racing 4, or Colin McRae DIRT by the time the year is over.

This is definitely a tough call. I don't own a 360 or a PS2 (although I may end up getting one just to play both God of War games), but in my completely unbiased opinion, I'll say watch out for Metroid Prime 3. This is not an obvious candidate for GOTY, but if the multi-player mode it good, it could beat out Halo 3. It could come down to MP3 just being more fun, with the motion controls and all. We'll just have to wait and see.

The multiplayer gives this one the legs that will keep on going. Now, if Mass Effect ends up having multiple endings based on your selections through out the game then that will be my pick.

Adventure 2. I haven't played it yet, but I can't picture it being beaten by much else.

Well, IGN has a Sony review staff that is larger than all the rest combined, so Nintendo will always be shut out there. Game Informer loves Zelda games, but is fairly lukewarm about most other Nintendo franchises. And you're definitely right about EGM always liking "adult" games more.
