So I've never played much Castlevania, and haven't ever given a game in the series more than an hour. Lately, I've been thinking of giving one of the games a try. I'm wondering what game in the series I should play for the best experience? I have an NES, SNES, Genesis, Gameboy/color, GBA, DS, N64, and PSX that I am aware have Castlevania games. Which one should I aim to start with.

First there are the classic classic 2d linear games. If you want pure action, this is probably the area to go to. And I'd recommend starting out with Super Castlevania for the SNES. Its a remake of the first one for the NES, and its my favorite linear Castlevania. It has amazing levels, including the well known spinning room. You can swing your whip in any directions, and unlike the other linear Castlevanias, it is impossibly hard.
Second there are the "Metroidvanias" These are Castlevania games that take place in one huge castle with different rooms that are accessible later in the game when you get better power ups, just like Metroid. If you would prefer to play one of these, I'd recommend Dawn of Sorrow for the DS. It has a great castle, great extra modes, and tons of power ups to look for, and great bosses and weapons.
The Third category is 3d Castlevanias. These are the ones for PS2 and N64. You should probably avoid these.

I am NOT a huge Castlevania fan either. I LIKE the series, it's very well done(except the crappy 3-D games), but I've only played four versions...the original on NES and C=>64, SNES, Genesis and Circle Of the Moon on GBA. All are good games, but the hardest part is getting used to using the whip... for that reason and others START WITH CASTLEVANIA:BLOODLINES on Genesis. You get to play another character that uses a spear, MUCH easier, plus the genny version is uncensored with lots of blood, nude statues, creepy monsters, excellent music and dramatic effects. It is one of my favorite non-shooter Genny games. We both seem to have similiar tastes( the 7800 rules, Pole Position 2 deserves better, etc....) so think it over! (I also recomend the other games, but again, I think this is the coolest, creepiest, bestest!)

Second, people need to get used to high diffculty and stop acting like babies.
You're don't deserve to play games if you promote easy over extremely hard, and you should be ignored until you gain more respect for games like Castlevania, Street Fighter 2010, Etc.
The Turbo game (Chi no Rondo, translated "Rondo of Blood") is indeed the best action-style game in the series (and can easily be aquired now if you have an Xbox 360). If you can't access this one, go with the earlier suggested Super Castlevania IV or Symphony of the Night.
How do you acquire this one if you have a 360? As far as I'm aware the only Castlevania on the 360 is the Symphony of the Nights port, which is extremely good.My vote is to find SOTN for the PSX and go with that first as it's the best in the series. After that give the GBA games a shot, they're all good. And if you have a backlighted GBA Circle of Moon is awesome. Regular GBA makes seeing things a bit too hard.

It is certainly a great game. But I think Super Castlevania (aka Castlevania IV) is a better choice to get into castlevania, because of its fair difficulty level. Rondo of Blood is suicidally hard and is meant for really hardcore gamers, and isn't for everyone.

NES
Castlevania
Castlevania III
PS1
Castlevania Symphony of the Night
Castlevania Chronicles
Genesis
Castlevania: Bloodlines
SNES
Super Castlevania IV
GBA
Aria of Sorrow
Harmony of Dissonance
DS
Dawn of Sorrow
PS2
Castlevania: Lament of Innocence (not as bad as people make it out to be)
Castlevania: Curse of Darkness (this is actually a really fun game)
I really enjoy the NES Castlevania games the best (except for Simon's Quest). Next the PS1 game is simply outstanding. You really shouldn't play this until you play the classics though. After you play SOTN its hard to go back to the slow action platforming NES games. Also if you find the recent 3D games cheap give them a shot. They aren't nearly as good as the 2D game, but they are still great.
