Some of my favorite 2 player classic games are Combat on the 2600, the biplanes mode on Triple Action for the Intellivision, Top Gear on the Super Nintendo, and Super Mario Kart on the Super Nintendo.

Tecmo Bowl and Super Tecmo Bowl, nuff said.
Blades of Steel was very fun back in the day.
Not sure if River City Ransom was mentioned?
Track and Field on PS1 was incredibly fun at the time. Everyone had their own technique on holding the controller and mashing on the buttons(no lighters allowed). We would actually compare blisters on our hands after hours of button-mashing. This game actually got a few of my non-gaming friends into the playstation. The first Need for Speed had an incredibly fun split-screen mode. HOURS of fun there.
Final Fight was always a blast to play in the arcade, with a friend. Accidently hitting your partner(friendly fire) would always result in a "payback" hit, or just fighting amongst yourselves. The characters were so huge, it was almost impossible to not hit your buddy sometimes. I know Double Dragon preceded this game but FF was just special and had that polished Capcom touch.
Can't forget Gunstar Heroes on the Genny. That game will never get old, and it's still a blast to play with a friend.

Coming from a hack n slash fan, I would have to say Baldur's Gate - Dark Alliance. My friend and I still play this game time and time again.
